Candied Crust Apple Pie Recipe | Pi Day 2019
This candied crust apple pie recipe was what I whipped up for Pi Day 2019. It turned out really great so I thought I may as well share. This is a pretty easy pie to make. Most of the sweetness comes from the crust, the filling is a little tart and very apple heavy. The apples will still have crunch to them after the pie is done. If you prefer no crunch in your filling, I would pre-cook the apples maybe for 5-10 minutes on the stove with a little water so soften them.
I used a premade pie crust because to be honest it was cheaper to buy premade crust than to buy the pound of butter I would need to make a crust. I’m also not super great at making crusts, but of course if you’re a good crust maker go for it.
Candied Crust Apple Pie Recipe
Makes one pie. Eight servings.
Ingredients
- Two pie crusts
- 6-7 small granny smith apples, peeled, cored, then cut in half and thinly sliced
- 1/2 cup unsalted butter
- 2 tablespoons flour
- 1 tablespoon cornstarch
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tablespoon + 1 tsp cinnamon
- 1 tsp ground nutmeg
- 1 tsp (plus a dash) ground ginger
- Water
Oven at 350 degrees. Cook time 40 minutes. Prep time: 30 minutes? (You have to peel and slice a lot of apples)
- Put bottom crust into pie pan and press in. Mound apples into pie crust.
- Note: most of the other ingredient measurements will be cut in half – half used for the pie filling and half used for the top of the crust.
- In a small bowl, mix 1 tablespoon flour, 1/2 tablespoon cornstarch, 1/4 cup sugar, 1/4 cup brown sugar, 1 tablespoon cinnamon, 1 tsp nutmeg and 1 tsp ginger.
- Melt 1/4 cup butter in small saucepan over medium heat. Add dry mixture and cook over medium heat for a few minutes, stirring constantly. Mixture will thicken a lot. Add a few tablespoons of water until mixture thins just enough to slowly pour.
- Pour mixture over apples.
- Create a lattice crust with the remaining crust. Place on top of pie and crimp edges.
- In a small bowl, mix 1 tablespoon flour, 1/2 tablespoon cornstarch, 1/4 cup sugar, 1/4 cup brown sugar, 1 tsp cinnamon and a dash of ginger.
- Melt 1/4 cup butter in small saucepan over medium heat. Add dry mixture and cook over medium heat for a few minutes, stirring constantly. Mixture will be very thick.
- Using a spoon or brush, cover the top crust with the mixture.
- Cook at 350 degrees for 40 minutes.
